My recent documents excludes excel files

Is there a way to make "my recent documents" include excel files?
Also, is there a way to increase the size of this list, and to "pin" some
files to it?

The date and time was 1/24/2008 11:12 AM, and on a whim, Happy pounded
out on the keyboard:

Making a shortcut on the Desktop to the actual folder will show you a
lot more "recent", whereas the Recent Documents in the Start Menu shows
only 15. It's path is usually:
C:\Documents and Settings\PROFILE_NAME\Recent
