Hi Dave,
First, I doubt if you will be able to send e-mail through your ISP using your domain name. When citing examples you should use example.com, i.e.
info@example.com, as it was reserved for that purpose and someone may own the example you used. Secondly, mail sent to your domain name would not resolve to your ISP's mail servers but to yours.
Is your domain active or parked? If active, you have a site up and running, ask you host if your have a mail server and what the POP and SMTP addresses are (POP is for receiving and SMTP for sending) and do you need to authenticate for sending e-mail. If it is parked I doubt you'll have a mail server.
If you have a mail server your host should be able to provide you with the URL and details (username/password) for logging in to create a new info@ e-mail account or they should be able to do it for you.
After you've created the info@ account, then go into Outlook Express (in your post you mentioned both Outlook Express and Outlook - two different programs but I'm assuming you meant Outlook Express) and setup the new e-mail address.
