I found that by going directly into My Documents from the Start Menu instead
of through a word processor everything works fine. With a word processor I
was getting a document filled with code whenever I double-clicked an image
file. I hope somebody will benefit from this, otherwise I wasted your time.

If you mean that when you double-clicked a photo in a Word file open
dialog, then the behavior you experience is correct.

A Word dialog should open files as if they were some kind of text file.

Double-clicking on a general file explorer menu should cause the file
to be opened by its "associated" program.
